Nutella Pancakes

Greetings everyone! I hope the weekend has been fun for you. If not I have something here that just may brighten your day. Id like to introduce you to my good friend Jojo of Pieces of Jojo! Hi everyone!!! i'm soo honored to be guest blogging over here. A HUGE Thank You to Melody for allowing me to share some of my favorite things with you all!!!! Feel free to head on over to my blog and let me know you've tried something and how it turned out!!! 

This recipe, pretty much just popped into my head this morning. I've been on a nutella kick for the past few days so it HIT the SPOT!!! There are two different ways you can make it depending on your preferences and i'll explain those in a few! My kids and I pretty much love ANYTHING chocolate, so this fit right up our alley!! This makes ALOT of pancakes that can be frozen and popped in the microwave on a busy morning! It doesn't make as much for us because we like our pancakes THICK. but if you like smaller pancakes, you'll be set for a WHILE! or just cut the recipe down to size if you'd like!
Ingredients:
6 cups Aunt Jemima Pancake Mix
2 single serve natural unsweetened apple sauce
2 cups Hersheys Chocolate chips 
1/2 cup nutella - microwaved to a liquid 
water
cooking spray
Directions:
In a large mixing bowl, combine pancake mix, apple sauce, chocolate chips, and water (use as much or as little to the consistency you'd like. the thinner the batter, the thinner the pancakes).


Heat your frying pan on medium heat and spray with cooking oil.
Pour about half of the amount you would use for a regular pancake (I did 1/2 cup).
Here is where you can do it one of two ways. You can either drizzle the Liquid nutella in the middle, or you can just put a circle amount in the middle. Both have pros and cons. my kids said the drizzle wasn't as noticeable of a taste. I had a harder time covering it up. The drop in the middle was more noticeable, BUT it was only noticeable in the center) I have it pictured both ways.


Pour more batter over the Nutella to seal it in. 
Sometimes, if the Nutella hits the frying pan, it will burn it.

Cook as you would a normal pancake waiting until it's ready to be flipped and then cooking on the other side.



You can either serve this up as is, or put some syrup on it (tho my kids decided they preferred it without syrup as it is sweet!). 

Freeze any leftovers for another morning!!

Keeping a Pumpkin Plant

My oldest daughter Harmony brought home a pumpkin plant from school last week (Open House) and I got very excited!
1. Because My sister in law had planted some pumpkins when she lived in this house and I regret pulling them up when we moved here 
2.Fall is my favorite time of year! 
3. Ive been wanting to make pumpkin pie like my great grandmother made. 

Here lies my problem. I know nothing about caring for them, and this includes when and how much to water them. So I've been googling away like mad for tips to keep these baby's alive. Have any tips for me? Share em! I'd be greatly obliged. Do you have a green thumb? Share your pics and you could be featured in a future blog post!

Gettin It Done

I just wanted to commend all the Moms and Dads out there that after having families, went back to school and lets face-it, conquered a juggling act of epic proportions. 

I just recently got myself back into school and I am EX to the HAUSTED. It takes not only courage but enormous trust in yourself to do this! My kids are so proud of me and seeing me work hard at getting the knowledge I tell them is so important really helps our foundation as a family. Its family core strengthening. 

So Great Job Moms and Dads! You deserve what youre doing for yourself and your family. 

You also deserve a medal and some awesome cupcakes

Yes, I have one on my right shoulder blade.

I have 4 kids and all 4 have different inspirations but I would say in general , being unique inspired them all.

I love my hair. Im very creative with it & its usually colorful.

Hell Yeah by Montgomery Gentry is the 1st one I think of. Its  such a fun song!

Oh I have those daily, Im a mom with extremely smart kids.

Sushi. If I get that I feel completely indulgent & happy.

Broccoli & Parmesan Rolls

Hello C&K Readers!
Ive had this recipe ready to go for a week now, why didnt I post it?
 Simple....Mental Exhaustion. Ahahaha. 
The weekend is here now and I have some down time so its time for a recipe!
This recipe is super easy (as long as youre comfortable using hot oil or  deep fryer) and very quick. 
I threw it together when i was extremely hungry, hadnt made it to the store yet & wanted some crispy crunch! This recipe did the trick. 

What Youll Need
Pot of hot oil or deep fryer at 400degrees
Pre-Made Eggroll Wrappers 
Parmesan Cheese
Broccoli Florets pieced
Chopped Green Onions
Water to moisten the egg roll wrapper



Place wrapper on flat surface fill the middle with ingredients , careful not to stuff too full. 
When you have the amount of ingredients in there that you want, moisten sides of wrapper with water.



Fold vertically so that sides overlap , and then horizontally over the middle. At this point I wet the edges again just a little bit with the water to make a slight pasty feeling so i know it stuck well and wouldnt open in mid fry.



 Each one of these only took about 2 min in the oil to completely melt the cheese and become golden brown. Depends on the strength of your fryer.



And there ya have it! Some crispy, crunchy , flaky yummy goodness!
